April is Fresh Celery Month, so make sure you stock up. (Gwyneth has!)

A naturally detoxifying veggie, celery (juice) was first used in the early middle ages to cure gallstones, constipation and disorders of the liver and gall bladder.

Now, we know celery is an excellent source of vitamins B1, B2, B6 and C — as well as potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium and essential amino acids.

It is so good-for-you, in fact, that mother-of-two Gwyneth Paltrow swears by celery, which is included in a diet prescribed for her by celebrity health guru Dr. Joshi. She is banned from consuming dairy, red meat and alcohol — as well as wheat, tomatoes, peppers, fruit, sugar and gluten.

She usually eats celery sticks for breakfast, lentil soup for lunch and has salmon with brown rice for dinner.

Now, that’s giving them something to (s)talk about!

One portion lentil soup: 150 cal.
One portion grilled salmon: 127cal.
One 200g portion cooked brown rice: 216 cal.
Total: 503 cal
